“Minoya” is a Japanese restaurant located near Shin-okachimachi and Asakusabashi stations in Taito-ku, Tokyo. Our restaurant offers kaiseki courses which allow guests to savor Japanese dishes that make use of generous servings of seasonal vegetables. We only serve Full-corse and Short-corse. Our menu changes with each month to feature new exquisite dishes that evoke the changing seasons while showcasing a variety of different cooking methods. As we greatly value the different food cultures of various groups of people, our restaurant offers courses that can cater to guests with vegetarian and gluten-free needs. For instance, when serving vegan guests, the strictest of vegetarians, we use only vegetables to prepare the “dashi” stock which is the base for the flavors of Japanese cuisine, and completely refrain from using any animal-based products in any of our ingredients and seasoning. Likewise, we only serve dishes that are completely free of gluten-containing products to gluten-free guests.
Based on the simple concept of “eating delicious vegetables,” our restaurant offers kaiseki courses that place special focus on “dashi” which determines the final taste of Japanese cuisine as well as the cooking techniques for preparing the ingredients. Guests can choose between Full-corse and Short-corse which make use of different seasonal vegetables and ingredients, and even vegan and vegetarian guests can feel at home enjoying the dishes at our restaurant. Our restaurant typically offers a selection of more than 10 kinds of Japanese sake brewed in various areas of Japan. Japanese sake is the perfect accompaniment to Japanese cuisine, and you can enjoy this combination as a memorable experience during your sightseeing in Japan. Also popular in our restaurant are sours, cocktails, and non-alcoholic drinks that contain our homemade syrup made using seasonal ingredients.
